The recipe:
4 4-ounce ramekins
4 ounces bittersweet chocolate
1/4 pound unsalted butter
3 eggs
3/4 cup granulated sugar
1/4 cup all-purpose flour
garnish: powdered/icing sugar, strawberries (optional)
Preheat oven to 400F. Prepare ramekins by generously buttering sides and bottoms. Place a parchment paper circle in the bottom of the ramekin and coat the inside with granulated sugar.
Melt the chocolate and 1/4 cup butter on a double boiler.
Whisk together the eggs, sugar, and flour just until blended. Gradually add the chocolate/butter mixture to the flour mixture. Divide the batter evenly among the ramekins, filling each with approximately 1/3 cup of batter. Place ramekins on a cookie sheet and bake at 400F for 10-12 minutes, or until the tops are firm and edges are set.
Cool slightly. Run a butter knife around the inside edge of the ramekin to loosen the cake. Invert on a plate and garnish as desired.
